- The “Trong” Anchovies are characterized by their size being slightly larger than the anchovies of the same family, so the bones of “Trong” Anchovies are slightly stiffer than other anchovies.
- After removing the bones, they are washed, seasoned with a little salt water, crushed chili and then dried to produce the Dried “Trong” Anchovies.
